Abstract


Kampar District is the largest producer of catfish in Riau. One of catfish products is salai catfis.The process of fresh fish processing into salai is still done traditionally using direct heat curing method, which is from firewood. The catfish processor admits to marketing difficulties due to the abundant catfish production, while the marketing reach is still limited. Activities undertaken are 1. The use of science and technology in terms of production of catfish catfish, aims to improve the quality, both in terms of production, nutritional value, hygiene and product durability. 2. variations in the production of processed catfish. Other products are meatballs, nuggets, spaghetti and catfish crackers. 3. More interesting product packaging 4. Changes in marketing strategy.  Salai catfish are usually sold to traditional markets in Kampar. Marketing is done by selling to the store / supermarket, making brochures, and labeling to look attractive. The result of this activity is 1. Increased quality of salai produced with modern fogging/closed systems. 2. Increased knowledge and ability of partners about the manufacture of variants processed patin (meatballs, nuggets, spaghetti and crackers 3. The presence of attractive packaging, (profit Rp 20.000, - per kg) and 4. Increasingly the area of marketing.
